It’s Sunday already? This weekend went by fast! Thanks to a few great nights of sleep, I’m feeling well rested and ready to take on the upcoming week. This morning I woke up at 8:30 and headed out to the kitchen to make myself a cup of coffee from my Keurig and have breakfast. I opened the fridge and a little container of blueberries seemed to be screaming at me. Something about fresh berries that I just can’t resist! I am surprised they’ve lasted this long in the fridge
I decided to have a Blueberry Breakfast Bowl.
Breakfast
I put a container of vanilla siggi’s yogurt in a bowl and topped it with almost the entire container of blueberries (don’t judge), and a handful of Bear Naked granola.
Crunchy, sweet, tangy, and yummy. Protein, carbs, and a dose of healthy fat from the spoonful of Earth Balance Coconut Peanut Spread I had with it. If you like peanut butter, and you like coconut (two of my favorite flavors), you will love this spread.
Today I am going to go to Bikram yoga for my cross-training day. I am finally getting more flexible and able to balance longer in the poses. Yay!
